Green onion ginger sauce

Ginger has so many health benefits. It halts growth of bacteria, calms down nausea, tame muscle aches, has anti-inflammatory properties, and so many more! With so many benefits, its a bonus that it is so tasty.

Just like the salt and pepper rub recipe, this sauce is also flavorful and versatile. Afterall, what good is a condiment or rub if it can only be used on one thing! This can also be made ahead, frozen and used in a moments notice. Check, check and check!

Most famously, this sauce is used with a poached chicken. A poached chicken has no real flavor of its own so you can imagine that it really becomes the vessel to deliver this sauce. I've used it myself on numerous chicken recipes and also mixed it into fried rice!

It takes a bit of work to do, but it is well worth the effort. I make it in bulk and freeze it so roll up your sleeves, put in a little sweat when you have the time and it'll repay itself to you when you're in a pinch.
